Mmmmm...Cherry Yogurt Pops!

Here is a summertime treat...and its healthy!  You and the kids can now enjoy a cool treat that is healthy for them instead of eating popsicles that are made of water, sugar and food coloring!  Aspen, Vince and I LOVE these!

Cherry Yogurt Pops
2 cups fresh cherries
1/2 cup cherry juice
1 cup plain or vanilla yogurt
1 cap full vanilla extract
1 teaspoon honey

Wash cherries VERY well.  Cherries will be sprayed (if not organic) so washing is EXTREMELY important!  Cut cherries in half and take pit out.  Puree the cherries and set aside.  Take half of the cherry puree and mix in cherry juice.  You can use any juice you want really.  Try to find a juice that is REAL juice (it will expire quickly), as it will be healthier then regular juice. 
*You can also make your own cherry juice by cooking 2-3 cups of cherries on low heat until mushy.  Then pour the cherries through a fine strainer and into a bowl.  Or you can use a cheescloth.*
Pour the cherry puree/cherry juice into the popsicle molds.  Freeze for about an hour.  In a separate bowl, mix the other half of the cherry puree, yogurt, vanilla extract and honey.  Mix well.  Then pour into the popsicle molds making sure the cherry puree/cherry juice mix is frozen.  Add popsicle sticks after about 20 mins.  Freeze well and enjoy!

*when i poured the cherry puree/juice mix in first, I froze them on an angle in the freezer so that I will get that slanted effect in the popsicle.
